Our Plum & Berry Compôte Recipe

Here at the Limpsfield Cookery School we all love a berry compôte to go with our toasted granola and Vikki has her own delicious recipe that we follow (see in the photo below).


It's a really simple recipe and makes a large jar which keeps in the fridge for up to a week.


It's super easy to make, so why not have a go yourself and use as a topping for our Toasted Oat & Cinnamon Granola (which is selling fast!) ?



High in protein and fibre

Our compôte not only contains plums and berries but also Chia seeds, which are protein rich, high in fibre, packed full of minerals and help to maintain a healthy cholesterol level.

Ingredients:

500g frozen fruit - you can use raspberry, blueberries or a mixed bag - forest fruits are great.

400g Plums - quartered and stoned.

3 tablespoons chia seeds.

1 tablespoon honey - optional.


Method:

Add all the fruit to a saucepan. Place on the hob and simmer for 50 mins on low, covered.

Remove from the heat, add the chia seeds and stir.

Leave to cool and transfer to a jar. Store in the fridge.


Serve on your granola with some natural yogurt.
